Easy Summer Salads!

As I do most of the cooking at home my main goal is to find easy but filling options–because I like cooking, but don’t want to spend a ton of time doing it. Now that it’s getting hot (and my new house has no central air–wah!!) I am definitely planning of adding more salad to my meal-planning rotation. Summer salads. They are my fave.  Here are some of my go-to options that I’m already looking forward to eating in the hot months ahead:

 

  1. Greek Salad.

I have this like almost every week.  It’s so good and so simple!  You can make it without chicken and it’s just as filling. I really like to add a side of crusty bread. It’s a perfect combo.  Mixed greens, red onion, tomato, cucumber, feta, oil/vinegar.  Que mas quieres?!

  1. Chicken Chopped Salad w/Quesadilla.

Omg. I discovered this salad on the food blog: How Sweet Eats and I have seriously made it so many times. It’s a winner in my house especially with the quesadillas (One edit: the blogger uses pepperjack cheese, but you already know that any self-respecting Mexican is going to use Chihuahua cheese for their quesadillas!).

  1.  Peach Salad.

Finally, a salad without meat. It calls for only arugula, but I always tend to mix my greens just to get as much vitamins as possible. Plus my husband hates arugula #wompwomp. Aside from the greens, add peaches, almonds, and onion. If you must have meat, it goes good with both salmon or steak.

  1. Sweet Salad.

This is such a random medley of sweet fruits on a bed of spinach, but it tastes so good!  I stole this idea from Corner Bakery–it’s my version of their sweet crisp salad. I mix spinach, kale, grapes, dried cranberries, cut-up orange slices, strawberries, red onion, goat cheese, sliced almonds, and a sweet vinaigrette. Every bite is so flavorful.

  1. Caprese.

The easiest salad, but also delicious. Mozzarella cheese, tomato, basil spice (my husband hates the real thing), and balsamic vinegar. So easy. And if you use heirlooms or cherries, it can look really artesian and perfect for a dinner party.
